Waugh's River Gardens

Farm

We are a small, family run farm on the North shore of Nova Scotia. We both went to school at Dalhousie Agricultural University. 12 years ago we purchased our property and started developing our gardens. Around the same time, we were at a friend’s house and he pulled out a big jar of fermented vegetables for us to try. We were hooked. That year we grew a large patch of cabbage and Christopher created his recipe for original kraut (cabbage, carrots, onions and garlic). He continued making our family a year’s supply of kraut every fall, perfecting his recipe. 10 years later, we finally decided to chase our farm dream. It just made sense to add sauerkraut to the products we planned on selling.

We started selling at the Tatamagouche Farmers’ Market the summer of 2020 and Nova Kraut was an instant success. We sold out every week and soon had stores requesting to sell it. After finalizing our four signature flavors, Nova Kraut was being sold in stores in the spring of 2021. Two years later, we have our own commercial kitchen and are looking forward to expanding throughout Nova Scotia.

We are very proud of the success of Nova Kraut and the contribution it makes to the local food supply. The fermentation process has been used for centuries as a way to preserve food and we feel it is important, especially in our climate, to create healthy, delicious products that can be available year round.
