Mediterranean or Pizza Style Cabbage Steaks


Ingredients


  • 1 large green cabbage from Ant Efforts

  • ¼ cup extra virgin olive oil

  • 3 cloves garlic from Sweet Earth Farm, minced

  • 1 tsp smoked paprika

  • 1 tsp dried oregano from The Perky Goat

  • ½ tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Marinara sauce or pesto

  • ½ cup crumbled feta cheese or shredded mozzarella

  • Sundried tomato from Waugh’s River Gardens, soaked in water or veg broth

  • 2 tbsp chopped fresh parsley

  • ¼ cup kalamata olives, sliced

  • Sliced cooked sausage from Mrs. Fifield's Flocks, Fred's Sausage or Sweet Earth Farm


Directions


  1. Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.


  2. Prepare the Cabbage: Remove any tough outer leaves from the cabbage. Slice it into ¾-inch thick rounds (steaks), keeping the core intact to help them hold together.


  3. Season the Steaks: In a small bowl, mix olive oil, garlic, smoked paprika, oregano, red pepper flakes (if using), lemon juice, salt, and black pepper. Brush both sides of each cabbage steak generously with the mixture.


  4. Roast: Arrange the cabbage steaks on the baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway through, until golden brown and caramelized at the edges.


  5. Garnish: Remove from the oven and:


Spread pesto on the steak then sprinkle with crumbled feta, fresh parsley, olives, and sundried tomatoes.


Or


Spread marinara sauce and top with mozzarella and sausages.


  1. Pop back into the oven until cheese is melted.
